May 2009-Egg Casserole, Punch

Here are the recipes from our yummy lunch at Diane's.

Egg Casserole
3 c. shredded cheddar cheese
8 oz. cream cheese, cut in cubes
2 c. diced ham
1/2 c. green onions
8 eggs
1 tsp. salt
1/2 c. Bisquick
1/2 lb. mushrooms, diced
1/2 tsp. mustard
2 c. half and half
Spray 9x13 inch pan. Toss together cheese, ham, green onions, and mushrooms and spread evenly in pan. Put everything else in blender and mix until well blended. Pour over top and bake for 35 to 40 minutes at 400 degrees (golden brown on top and until knife comes out clean.)

The strawberry lemonade is:
1 pkg crystal light lemonade made as directed
then I mix about 1 cup water with 2-3 cups washed strawberries
in blender and mix the 2 together.

That day Diane added some punch she had left over.
That recipe is:
3 packs cherry flavored kool-aid
1 large can pineapple juice
1 large bottle sprite
2 cups sugar that has been diluted with 2 cups hot water
8 oz can frozen lemonade

(mix together and chill) if it is too sweet for you, further dilute
with more sprite

She added about 1 quart of the punch with the 1st punch mixture
