June 2009-Chicken Salad, Frito Salad

Here are a couple of the recipes from our last meeting. After a wonderful show and tell (pictures coming shortly), Rachel demonstrated how to make wool penny rugs and we swapped wool fabric so we can all make a penny rug. Lunch was a fun treat and as usual requests came for recipes. So here are 2 of them. More may be coming later.

Chicken Salad

4 c. chopped chicken
3 celery ribs, diced
1 c. dried cranberries
1/2 c. chopped toasted pecans

Dressing:
1 1/2 c. mayonnaise or less if you desire
1/3 c. honey
1/4 tsp. salt
1/4 tsp. pepper



Frito Salad

1 medium onion, chopped
2 green bell peppers, chopped
2 yellow bell peppers, chopped
2 red bell peppers, chopped
2 to 3 tomatoes, chopped
1 can red kidney beans
1 bottle Catalina salad dressing
1 bag Fritos corn chips

Add all ingredients together in a bowl, except the dressing and Fritos. Toss together. Add dressing, as much as desired to coat, and also add the Fritos when ready to serve.
