LUNCH

Bowtie Pasta Salad
1 lb. broccoli
1/2 c. mayo
1/2 c. plain Greek yogurt
3 packets Stevia
1/3 c. red onion, diced
1/3 c. red wine vinegar
1 tsp. sea salt
2 c. seedless red grapes
6 bacon strips, cooked
1/4 c. chopped pecans
Preheat oven to 350˚. Bake pecans for about 6 min, stirring. Cut broccoli florets from stems and separate into small pieces. Whick together mayo, yogurt, stevia, red onion, vinegar, salt and toss with broccoli, hot cooked pasta and grapes. Stir to coat. Add bacon and pecans just before serving.

Maurene explained a method for finishing off binding, to have the two ends join in a very nice manner. She also provided a hand out containing the instructions for this method.
Thank you, Maurene. The luncheon was wonderful and eating outside was so enjoyable.
See you all in July. Our meeting will be held at Jeanie's.
