April 2025 Meeting

  • Our meeting for April 2025 was held at Robyn Chamberlain's home. She had us bring some of our UFO's UnFinished Objects
  •  We had to explain: 
  • why we stopped working on them, 
  • when we had started them,
  •  if we were ever going to finish them, 
  • and how many times we had started, stopped and started again, still left unfinished. 

It was lots of fun. Some had fabric all cut out and then left, some brought theirs to give away for someone else to complete and others had complete tops and had left their project at that point. Robyn gave out prizes to people who fit the above categories!  Some of the UFO showing was pretty entertaining! We laughed a lot!

Asian Chicken Pasta Salad

Robyn’s Asian Chicken Pasta Salad

 

Sesame-Soy Dressing:

¼ c. soy sauce

2 Tbs. sesame oil

2-3 Tbs. white vinegar (adjust to taste)

1 Tbs. rice vinegar

¼ c. olive oil

1 Tbs. brown sugar

 

Pasta Salad:

12 oz. mini farfalle pasta

2 c. rotisserie chicken, chopped

1 c. carrot, shredded

¾ c. cilantro, roughly chopped

½ c. green onion, thinly sliced

½ c. red pepper, sliced very thin and cut ½” long

½ c. snap peas, sliced on the diagonal

1 c. mandarin oranges, drained

Peanuts, chopped fine

 

Mix together dressing ingredients and set aside.  Cook pasta in boiling water per package directions for al dente pasta.  Drain pasta and rinse with cold water.  Put pasta in large mixing bowl and add chicken, carrots, cilantro, onion, bell pepper, snap peas, and dressing.Toss to coat. Gently stir in mandarin oranges.  Serve peanuts on the side as an optional topping.
