February 2025 Meeting

Thank you Diane Spackman for hosting February's meeting and for putting together the donations for our local NICU! It was fun seeing everyone's latest show and tell items and also getting to enjoy great company and yummy food.

BRUNCH
Taco Chili, toppings, cinnamon rolls, Morning Glory Muffins





 RECIPES FROM FEBRUARY 2026 MEETING


Seven Can Soup/Taco Chili

15 oz can no beans (Hormel) chili 

10 oz can Rotel diced tomatoes and chilies

10 oz can enchilada sauce (I used medium)

15 oz can kidney beans

15 oz can black beans

8 oz can corn

15 oz can chicken broth

Toppings: Cheese, diced avocado, broken tortilla chips and sour cream.

2 T taco seasoning

salt and papper

Don't drain anything.  Add all to soup pan. Bring to a boil. Simmer for 15 minutes. Serve


MORNING GLORY MUFFINS

2.5 cups flour

1 3/4 cups sugar

1 T. cinnamon

2 T baking soda

2 cups grated carrots

1 cup golden raisins

1 cup unsweetened shredded coconut

1 cup chopped pecans and/or walnuts

1 large apple, grated

4 large eggs

1 cup veg. oil (I use 1/2 applesauce)

1 T vanilla

In a large bowl: combine flour, sugar, cinnamon, baking soda, carrots, raisins, coconut, pecans and apple. Mix well.

In a separate bowl: whisk together eggs, oil and vanilla. Add to dry ingredients and mix until just combined. Place in muffin papers and bake at 350 for 35 (watch closely) minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow the muffins to cool slightly in the pan, remove to wire rack to cool completely. Makes 24

Can half this recipe.  Bake time depends on how many muffins you are baking at one time.

Don't over bake, they become dry.
