May 2012-Sparking Basil Lemonade,Dilly Casserole Bread,Apple/Greens/Pecan salad,Fruit Salad,Potato/corn/bacon/tomato Salad


We had a wonderful meeting at Nancy Christensen's in May. Many group members were in attendance, along with three visitors, all daughters of members. Here are our show and tell pictures. We also collected pastel color donation squares for the next humanitarian quilt top.

The next few pictures are Cindy's quiet books that will be donated. She designed each page. They were made as a humanitarian project. Nicely done!





QUILT LABELS
  Nancy taught us about making labels for our quilts and gave us quite a few different ideas. She gave some good reasons to label quilts. It was good motivation for those who don't take the time.

Here are some examples of unique labels.
We were able to trace out of this little book, to take a label home. Good inspiration.

Sparkling Basil Lemonade
         ingredients

               4 
cups water
                
               3 
cups sugar
                
               2 
cups fresh basil leaves (about 1-1/2 ounces)
                
               2 
1 liter bottles club soda, chilled
                
               2 
cups lemon juice
                
               Ice cubes
               Fresh basil leaves

directions
1.For basil syrup, in a large saucepan combine water, sugar, and basil. Bring to boiling over medium-high heat. Reduce heat. Simmer, uncovered, for 20 minutes. Strain syrup and discard leaves. Cover and chill syrup for 2 to 24 hours.
2.For lemonade, in a very large punch bowl combine chilled syrup, club soda, and lemon juice. Serve over ice and garnish with fresh basil leaves.

Dilly Casserole Bread

This recipe comes from the 1980 Lion House Recipes Book.  It is one of the easiest breads you can make.  Great alone, but can also be sliced through the round once or twice and filled with fixings for a large picnic sandwich.

Ingredients:

1 pkg dry yeast
¼ C lukewarm water
1 C creamed cottage cheese (heated to lukewarm
2 T sugar
1 T instant minced onion, or 2 T finely chopped fresh
1 T butter
2 tsp dill seed (not weed)
1 tsp salt
¼ tsp baking soda
1 unbeaten egg
2 ¼ to 2 ½ C all purpose flour

Directions:
Soften yeast in water.  Combine in mixing bowl:  cottage cheese, sugar, onion, butter, dill seed, salt, soda, egg and softened yeast.  Add flour gradually to form a stiff dough, beating well after each addition.  Cover.  Let rise in warm place until light and double in bulk (45-60 min).

Stir dough down.  Turn into well-greased 8 or 9-inch round casserole.  Let rise in warm place until light, 30-40 minutes.  Bake at 350 degrees for 30-40 minutes, until golden brown.  Brush with soft butter and sprinkle with coarse salt.


Apple/greens/pecan salad with maple dressing
I used romaine and pecans, and light mayo in the dressing.  Other than that, recipe was identical.
  
Apple, Dried Cherry, and Walnut Salad with Maple Dressing

Maple Dressing
         1/4 cup mayonnaise
         1/4 cup pure maple syrup
         3 tablespoons Champagne vinegar or other white wine vinegar
         2 teaspoons sugar
         1/2 cup vegetable oil

Salad
         1 5-ounce bag mixed baby greens (about 10 cups lightly packed)
         2 Granny Smith apples, peeled, cored, cut into matchstick-size strips
         1/2 cup dried tart cherries
         1/2 cup chopped walnuts, toasted

preparation
For dressing:
Whisk mayonnaise, maple syrup, vinegar, and sugar in medium bowl to blend. Gradually whisk in oil until mixture thickens slightly. Season to taste with salt and pepper. (Dressing can be prepared 3 days ahead. Cover and refrigerate. Re-whisk before using.)
For salad:
Toss greens, apples, cherries, and 1/4 cup walnuts in large bowl to combine. Toss with enough dressing to coat. Divide salad equally among plates. Sprinkle with remaining 1/4 cup walnuts and serve.


Favorite Fruits Salad
(strawberries, blueberries, apples, bananas, grapes).  Dressing was "company" (whole-milk) Greek Honey Yogurt with additional honey, and juice from half of a lemon..  Add quinoa (keen wah).  I used about 2/3 C of red quinoa.  Soak grain for 5-10 minutes, rinse well and then cook for about 15 minutes in 1 1/3 C water.


Potato/Corn/Bacon/Tomato Salad 
Cook red potatoes until tender, then cool in ice water.  Add corn, diced bacon, grape or cherry tomatoes, red onion, radishes (opt.), fresh basil.   Dress with oil and white wine vinegar. Season with salt and pepper to taste.

April 2012


It was a beautiful spring day in a beautiful setting at Susan's home on the banks of the Boise River. Thank you Susan for hosting this month!
Lori told us this month that she will be moving to Spokane the end of May.  :(  We are soooo sad to lose her from our group, we've been so inspired by many of her quilts and ideas. But we know how happy she will be to have her husband at home more. Lori, we wish you the best always. We can't wait to hear of your adventures and of your new quilting buddies in Spokane! Please stay in touch!

 Darla's gift from her sister who lives in Twin Falls, Id. The purse is made from recycled baby car seat belts by people in that area. The ribbon and flower are interchangeable.
