I had a few people ask for recipes from our March meeting so I thought this would be a good place to share them. Let me know if you have any questions.
Pork
4 lbs pork roast
5 cans tomato sauce (8oz)
3 tsp pressed garlic cloves
1 1/2 - 3 cups brown sugar
4 tsp cumin
4 cups Dr. Pepper
2-4 tbs molasses
1/2 tsp salt
pepper to taste
Mix the entire aboge ingredients, place ina crock-pot, and let simmer until meat is tender and pulls away with fork.
This will work overnight or about 8 hrs on low. This also makes a TON of sauce so you can mix the sauce and either double the meat or freeze half of the sauce for next time.
Lime Rice
2 Tbs butter
1 1/4 cup rice
2 1/4 cup chicken broth
3/4 tsp salt
pepper
juice and zest of 1 large or 2 small limes
2 Tbsp chopped cilantro (I added more lime and cilantro)
1/4 tsp cumin
In a skillet, melt butter with rice. Add the rest of the ingredients and bring to a boil. Reduce heat, cover and cook for 20 minutes.
I ended up tripling this for our quilt group and the ratios worked well.
Creamy Cilantro Dressing
16oz bottle of mild La Victoria tomatillo salsa (or any other mild green salsa)
1 package dry buttermilk ranch dressing
1/2 cup sour cream
1/2 cup mayo
1/2 cup buttermilk
1 cup fresh cilantro
2 cloves garlic
1/4 tsp cayenne pepper
1/2 tsp salt
2 Tbs lime juice
1/2 tsp cumin
1/4-1/2 cup sugar
Blend all ingredients in a blender until smooth. Refrigerate
Serve with Black beans, cheese, tomatos, cliantro, sour cream, etc. I also like the uncooked toritllas from Costco (in the refrigerated section).

Thanks for sharing your recipe. I was lucky enough to have dinner at Diane B.'s yesterday and she used your recipe. It was such a hit with everyone and now, of course, my family is begging me to make it.
