Feb 2020 mtg

Sorry this is posting so late, but our world has turned a bit upside down these past few months. We have not been able to meet together since this meeting in late February, but we managed to have a great Zoom meeting with several of our group this past week. The photos from the Zoom meeting will be in a separate post.
Thank you so much Diane and your daughter Nancy for making this February meeting great! There was a big turnout, lots of quilts and projects shown and wonderful food!

Lunch

Cinnamon Roasted Nuts(not shown)
1 cup white sugar
1/2 tsp kosher salt
2 tsp cinnamon
1 egg white
1 tsp vanilla
4 cups almonds

Preheat oven to 250. Cover a 13x18 baking sheet with parchment paper.
In a small bowl combine sugar, salt and cinnamon. Set aside.
In a large bowl slightly beat the egg white. Add vanilla and beat until very frothy, but not stiff. Add the almonds and stir until well coated. Add the cinnamon and sugar mixture and toss until evenly coated. Spread evenly on the prepared pan.
Bake for one hour, stirring half way through. Allow to cool then store in an airtight container.


JALAPENO CRANBERRY FREEZER JAM SPREAD-NOT SHOWN

Serve with: Use on Turkey Sandwiches page 275 or Veggie Sandwiches page 283. Variation: Omit jalapeno; or, use more Jalapeno for more kick.
TIME: 20 minutes

Ingredients

3 cups (about 1½ lbs.) fresh cranberries rinsed, ground

    3 cups apples (about 5 medium) any kind, cored, skins removed, ground

      2½ -3 Jalapeno peppers, seeds removed, ground

        1 1.75 oz. package Fruit Pectin (I use Sure Jell or MC)

          8½ cups sugar

            9-12 half pint containers, glass or plastic with lids

              Instructions

              Grind the fruit and peppers in a food processor to make 6 cups. Pour

              1. into a large pan, add the pectin, stir and bring to a boil.

              Add sugar, stirring well and bring to a full boil again. Pour the hot sauce

              1. in jars or plastic tubs. I have used both. Put the lids on and let sit out on
              2. the counter over night. Freeze. Will keep for months.
              Personalized cookies for each of us!

              Sparkling Mint Lemonade (Williams Sonoma)
              Ingredients:

              • 1 cup fresh mint leaves, plus more for garnish 
              • 8 fl. oz. simple syrup (see note above) 
              • 1 cup fresh lemon juice 
              • 6 cups cold water 
              • Ice, as needed 
              • 2 cups sparkling water 
              • Lemon wheels for garnish 
                --To make simple syrup, in a measuring cup, stir together 1/4 cup superfine sugar in 1/4 cup hot water until dissolved. Let cool. This recipe makes 3 fl. oz. syrup and can be doubled or tripled as needed.

              Directions:

              In a punch bowl, combine the mint leaves and simple syrup. Using a muddler or wooden spoon, gently muddle the mint leaves, being careful not to tear them. Stir in the lemon juice and cold water. Add ice and the sparkling water. Garnish with lemon wheels and mint leaves. Makes 12 drinks.
