Granola Recipe

Granola

(this recipe can be doubled)

3 cups rolled oats (not quick)
1 cup slivered almonds, or sliced
1 cup various nuts, broken coarsely, I used whole almonds also
3/4 cup shredded sweet coconut
1/4 cup dark or light brown sugar
1/4 cup plus 2 T. maple syrup
1/4 cup vegetable oil
3/4 t. salt
1 cup raisins (optional)
Preheat oven to 250 degrees.

In a large bowl, combine the oats, nuts, coconut, and brown sugar.
In a separate bowl, combine maple syrup, oil, and salt. It takes a few minutes of stirring. Pour syrup mixture over oat mixture, and combine. Pour onto a sheet pan. Cook for 1 hour, stirring half way through.
remove from oven and transfer into a large bowl. Add raisins and mix.

note: other dried fruits can be used instead of raisins, I.e. cranberries, cherried, chopped dates, chopped apricots, blueberries.

This granola is excellent when served over plain yogurt with chopped fresh fruit.
